A bistro apron is a waist apron taken long: it ties at the waist and drops to the mid-calf, protecting trousers and shoes without the bib panel that gets in the way of a shirt and tie. Ours is a 28-inch cut in 7.5 oz poly-cotton twill, with two deep patch pockets and a center split so the apron moves with a fast walk instead of binding at the knees. The ties are long enough to wrap and knot in front, bar-tacked at both ends.

The mark usually goes low, on or just above the pocket line, where it sits at eye level for a seated guest. Embroidery is the standard for dining rooms; a screen print is the better choice when the artwork is large or the room is loud and casual.
